Apple Mail on Mac OS X has some really cool email stationery hidden away under the stationery button on top of your composition window. Many of them even have photo placeholders that allow you to drag in images from iPhoto or Finder.
You can find more stationery templates from third-party sources, or if you’re comfortable with HTML and CSS you can find guides on the internet that explain how to make your own or modify the existing ones.
